Ajijates (potato fritters)

Hello my friends, yesterday as an alternative to bourek I made 3jijates (patties of potatoes), there are two ways to make 3jijates: with cooked potato or with raw potato.

In this recipe, I made it with raw potato, and it’s also good.

  • 2 Potatoes
  • parsley
  • Pepper
  • Salt
  • Cheese of your choice
  • 1 Egg
  • 2 Tbsp flour
  • 1 Garlic clove, chopped
  • 1 Tbsp of oil


  • Grate the potatoes
  • Put them in a large sieve and let them come out of their water
  • Squeeze the potatoes, and add the egg, flour, spices, parsley, cheese and garlic
  • Heat a pan, add 1 tbsp of oil
  • Using a spoon put a pile on the hot pan
  • Flatten it with a spatula
  • Brown on each side
  • Keep warm.
