Velvet mushroom soup

I love mushrooms, and I like eating the more so, I still have a box lying around in my closet. and the mushroom soup is a real sweetness at a party.

Ingredients (6 persons):

  • 3 tbsp butter
  • 1 onion
  • 250 g mushrooms in Paris
  • 2 tbsp flour
  • 1/4 liter of broth (or water)
  • 1/2 liter of milk
  • 1 lemon
  • 1 tbsp chopped parsley
  • Salt
  • Pepper

Preparing the recipe:

  • Melt in a saucepan 1 tbsp butter
  • Add a little chopped onion and mushrooms
  • Add salt and pepper, sprinkle with chopped parsley
  • Cover and cook on low heat for 15min
  • Add the flour, stirring constantly. Add 1/4 liter of broth (or water) and 1/2 liter of milk
  • Cook over low heat, stirring occasionally
  • When the soup starts to boil, cook uncovered yet 15 min
  • Mix well and serve with the lemon juice
